Weeknights can be busy and hectic, leaving little time for meal preparation. However, it is still very important to eat a nutritious and satisfying meal after a long day at work or school! Below you will find five easy weeknight dinner ideas that are delicious and can be prepared in no time!

 

Baking Sheet Chicken Fajitas

This one-pan meal is perfect for a quick and easy dinner! Simply toss sliced bell peppers and onions with chicken strips in a mixture of cumin, chili powder, garlic powder, salt, and a little bit of olive oil. Scatter on a baking sheet and roast in the oven for 20-25 minutes, or until the chicken is cooked through. Serve with warm tortillas and your favorite toppings, like shredded cheese, sour cream, and limes!

One-Pot Pasta

This recipe is a lifesaver on busy weeknights, as it only requires one pot and takes less than 30 minutes to make! Combine dry pasta, cherry tomatoes, garlic, chicken broth, and a pinch of salt and pepper in a large pot. Bring to a boil and cook for 10-12 minutes, or until the pasta is tender and the sauce has thickened. Stir in chopped basil and grated Parmesan cheese before serving.
